Ingredients
-
2 cups cooked chicken, shredded (rotisserie chicken works well)
-
1/2 cup cream cheese, softened
-
1/4 cup sour cream
-
1 teaspoon chili powder
-
1/2 teaspoon cumin
-
1/2 teaspoon garlic powder
-
1/2 teaspoon onion powder
-
Salt and pepper to taste
-
1 cup black beans, drained and rinsed
-
1 cup corn kernels (fresh, frozen, or canned)
-
1/2 cup shredded cheddar cheese (or Mexican blend)
-
1/4 cup fresh cilantro, chopped
-
4 large flour tortillas (or whole wheat)
-
Optional: Salsa, guacamole, or extra sour cream for dipping
Instructions
-
Prepare the Chicken Filling: In a large bowl, combine the shredded chicken, cream cheese, sour cream, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix until well combined and creamy.
-
Add the Veggies and Cheese: Stir in the black beans, corn, shredded cheese, and chopped cilantro. Mix gently to combine.
-
Assemble the Wraps: Lay the tortillas flat on a clean surface. Divide the chicken mixture evenly between the tortillas, placing the filling in the center of each one.
-
Wrap: Fold in the sides of the tortilla and then roll it up tightly from the bottom. Repeat with the remaining tortillas and filling.
-
Serve: Serve the wraps immediately or slice them in half for easier eating. Optionally, serve with salsa, guacamole, or extra sour cream for dipping.
Notes
-
You can make these wraps ahead of time and refrigerate them for up to 2 hours for a quick grab-and-go meal.
-
For a spicier version, add some chopped jalapeños or a few dashes of hot sauce to the chicken filling.
-
Feel free to swap the cream cheese for Greek yogurt for a lighter version of the filling.
