Description

Marry Me Chicken is a creamy, savory chicken dish that is so delicious, it might just convince someone to put a ring on it! Tender chicken breasts cooked in a rich and flavorful sun-dried tomato cream sauce, enhanced with garlic, herbs, and Parmesan cheese. It’s perfect for a special dinner or a weeknight treat!


Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper to taste

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped (packed in oil)

1/2 cup chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for heat)

Fresh parsley, chopped (optional, for garnish)


Instructions

  • Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 6-7 minutes on each side, until golden brown and cooked through (internal temperature of 165°F or 74°C). Remove the chicken from the skillet and set aside.

  • Make the Sauce: In the same skillet, add the minced garlic and cook for about 1 minute, until fragrant. Add the chopped sun-dried tomatoes and cook for another 1-2 minutes.

  • Add Liquids: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the heavy cream, Parmesan cheese, oregano, basil, and red pepper flakes (if using). Bring the mixture to a simmer and cook for 3-5 minutes until the sauce thickens.

  • Combine: Return the chicken breasts to the skillet, spooning some of the sauce over the chicken. Simmer for 3-5 more minutes to allow the chicken to soak in the flavors of the sauce.

 

  • Serve: Garnish with fresh parsley if desired. Serve the chicken with the sauce over pasta, rice, or steamed vegetables.


Notes

  • If you prefer a lighter version, you can substitute the heavy cream with half-and-half or coconut cream.

  • For a bit of tang, add a squeeze of lemon juice to the sauce before serving.
