Description

These Cilantro Lime Chicken Thighs are juicy, flavorful, and packed with bright, zesty flavor. Marinated in a mix of lime juice, garlic, and fresh cilantro, then seared to golden perfection, this dish is perfect for a quick weeknight dinner or meal prep. Ingredients

6 boneless, skinless chicken thighs

1/4 cup fresh lime juice (about 2 limes)

2 tablespoons olive oil

3 cloves garlic, minced

1/4 cup chopped fresh cilantro

1 teaspoon ground cumin

1/2 teaspoon chili powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional: extra lime wedges and cilantro for garnish


Instructions

  • In a large bowl or zip-top bag, combine lime juice, olive oil, garlic, cilantro, cumin, chili powder, paprika, salt, and pepper.

  • Add the chicken thighs and toss to coat. Cover and marinate in the fridge for at least 30 minutes, up to 8 hours.

  • Heat a large skillet over medium-high heat.

  • Remove chicken from the marinade and shake off excess.

  • Cook the chicken thighs for 5–6 minutes per side, or until golden brown and cooked through (internal temp should reach 165°F).

  • Remove from heat and let rest for a few minutes.

 

  • Garnish with fresh cilantro and lime wedges if desired. Serve warm.


Notes

  • For extra flavor, marinate the chicken overnight.

  • This recipe also works well on the grill or in the oven.
