Description

This Whole Peach Mochi recipe creates soft and chewy mochi wrapped around entire ripe peaches, blending the sweet, juicy fruit with the delicate texture of glutinous rice dough. Enhanced with vanilla and optional fillings like red bean paste or whipped cream, it’s a delightful Japanese-inspired dessert that’s both visually appealing and delicious.

Ingredients

Scale

Mochi Dough

  • ¾ cup glutinous rice flour (mochiko)
  • ¼ cup granulated sugar
  • ½ cup water
  • ½ teaspoon vanilla extract
  • Food coloring (optional)

For Dusting

  • ¼ cup cornstarch or potato starch

Filling and Fruit

  • 4 small ripe peaches (peeled and pitted)
  • ¼ cup sweet red bean paste or whipped cream (optional filling)

Instructions

  1. Prepare Mochi Dough: In a microwave-safe bowl, combine the glutinous rice flour, granulated sugar, and water. Stir until smooth and no lumps remain. Add vanilla extract and a few drops of food coloring if desired to enhance the dough color.
  2. Cook Mochi Dough: Cover the bowl loosely with plastic wrap or a microwave-safe plate and microwave on high for 1 minute. Stir the mixture thoroughly, then microwave again for another 1 to 2 minutes, stirring every 30 seconds. Continue until the dough becomes thick and slightly translucent, indicating it is properly cooked.
  3. Cool and Dust Surface: Allow the mochi dough to cool for a few minutes to make it easier to handle. Meanwhile, dust a clean surface generously with cornstarch or potato starch to prevent sticking.
  4. Divide and Shape Dough: Transfer the cooled mochi dough onto the dusted surface and coat it with additional starch. Divide the dough into four equal portions. Flatten each portion into a circle large enough to wrap entirely around a peach.
  5. Assemble Peach Mochi: Place a peeled and pitted peach in the center of each mochi circle. If desired, add a spoonful of sweet red bean paste or whipped cream atop each peach for extra flavor and texture.
  6. Seal Mochi Around Peaches: Carefully stretch and pinch the edges of the mochi dough around the peach to seal it completely, ensuring the fruit is fully enclosed. Dust with more starch as needed to prevent sticking during handling.
  7. Chill Before Serving: Place the assembled peach mochi in the refrigerator and chill for 10 to 15 minutes. This resting period helps achieve the best chewy texture and makes them easier to handle and serve.

Notes

  • You can use canned peaches if fresh ones are not available, but make sure to drain them thoroughly to avoid excess moisture.
  • For a fruity variation, substitute red bean paste with your favorite fruit jam or custard.
