Scale
Base Ingredients
- 1/2 tablespoon olive oil
- 1/4 cup sweet onion, chopped
- 1/2 – 1 jalapeño, minced (to taste)
Dairy and Liquids
- 1 lb white American cheese, shredded
- 1 cup milk
- 1/4 – 1/2 cup low sodium chicken broth
Fresh Herbs and Vegetables
- 1/4 cup cilantro, chopped
- 1/2 cup tomatoes, finely diced
Seasoning
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Heat the Oil: Add olive oil to a small skillet and warm it over medium heat until shimmering to prepare for sautéing.
- Sauté Vegetables: Add the chopped sweet onion and minced jalapeño to the skillet. Cook, stirring occasionally, until the onions are soft and translucent and the jalapeño is fragrant, about 3-5 minutes.
- Melt the Cheese: Turn the heat down to low. Add the shredded white American cheese and milk into the skillet. Stir constantly to gently melt the cheese and create a smooth mixture without burning.
- Adjust Consistency: Slowly add the low sodium chicken broth, stirring well after each addition, until the queso reaches your desired creamy consistency.
- Add Fresh Ingredients: Stir in the freshly chopped cilantro and finely diced tomatoes to incorporate freshness and texture.
- Season to Taste: Add kosher salt and freshly ground black pepper according to your preference and mix thoroughly to combine.
- Garnish and Serve: Garnish with additional fresh chopped cilantro or a spoonful of Pico de Gallo before serving warm with tortilla chips or your favorite dippers.
Notes
- Adjust jalapeño quantity to control the heat level of the dip.
- Use low sodium chicken broth to manage salt content and flavor balance.
- White American cheese provides the best melt and creaminess; however, you can substitute with white cheddar or Monterey Jack if desired.
- For a vegetarian version, substitute chicken broth with vegetable broth.
- This dip is best served warm and consumed fresh, but you can reheat gently on low heat.
