Instructions

  1. Heat the Cream: Place the heavy cream in a saucepan over medium heat and warm until it begins to simmer gently, but do not boil.
  2. Make the Ganache: Pour the hot cream over the chopped white chocolate. Let it sit undisturbed for 2 minutes to soften the chocolate, then stir gently until the mixture is smooth and fully combined.
  3. Add Strawberry Powder: Mix the freeze-dried strawberry powder into the ganache thoroughly to infuse the mixture with berry flavor and a slight pink hue.
  4. Chill the Mixture: Cover and refrigerate the ganache for 2 to 3 hours until it firms and is scoopable.
  5. Shape the Truffles: Use a spoon or small cookie scoop to portion out the firm ganache into 1-inch balls, rolling them gently between your palms to shape.
