Description
Delight in these luscious White Chocolate Strawberry Truffles, combining creamy white chocolate ganache with vibrant freeze-dried strawberry flavor. These no-bake, elegant treats are perfect for gifting or savoring as a decadent dessert.
Ingredients
Scale
For the Truffles:
- 1 cup white chocolate, chopped
- 1/2 cup heavy cream
- 1/4 cup freeze-dried strawberries, blended into powder
For the Coating:
- 1 cup white chocolate, chopped
- 1 tablespoon freeze-dried strawberries, crushed
Instructions
- Heat the Cream: Place the heavy cream in a saucepan over medium heat and warm until it begins to simmer gently, but do not boil.
- Make the Ganache: Pour the hot cream over the chopped white chocolate. Let it sit undisturbed for 2 minutes to soften the chocolate, then stir gently until the mixture is smooth and fully combined.
- Add Strawberry Powder: Mix the freeze-dried strawberry powder into the ganache thoroughly to infuse the mixture with berry flavor and a slight pink hue.
- Chill the Mixture: Cover and refrigerate the ganache for 2 to 3 hours until it firms and is scoopable.
- Shape the Truffles: Use a spoon or small cookie scoop to portion out the firm ganache into 1-inch balls, rolling them gently between your palms to shape.
- Refrigerate Again: Place the formed truffle balls on a tray and chill in the fridge for at least 30 minutes to firm further.
- Melt Coating Chocolate: Melt the white chocolate intended for coating in a microwave-safe bowl. Heat in 20–30 second bursts, stirring between intervals until smooth and fully melted.
- Coat the Truffles: Dip each chilled truffle ball into the melted white chocolate, ensuring it is thoroughly coated. Use a fork or dipping tool to lift them out and allow excess chocolate to drip off.
- Decorate with Crushed Strawberries: Immediately sprinkle the coated truffles with crushed freeze-dried strawberries for added texture and flavor before the coating sets.
- Set the Coating: Place the finished truffles back into the fridge for about 30 minutes to allow the chocolate coating to harden completely before serving.
Notes
- Use good-quality white chocolate for a smoother ganache and better taste.
- Freeze-dried strawberries add intense flavor without moisture; avoid substituting with fresh strawberries.
- Keep the truffles refrigerated until serving to maintain their shape and freshness.
- For easier rolling, lightly grease your hands or use powdered sugar if the ganache is sticky.
- These truffles can be stored in an airtight container in the refrigerator for up to one week.
