Description

White Chocolate Blueberry Crumble Bars are a delicious dessert that combines sweet, juicy blueberries with creamy white chocolate and a buttery crumble topping. Perfect for summer, these bars are easy to make and perfect for a family treat or potluck.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup old-fashioned rolled oats
  • 1 cup fresh blueberries
  • 1/2 cup white chocolate chips
  • 1/4 cup lemon juice
  • 2 tbsp cornstarch
  • 1/4 cup powdered sugar (for dusting, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. In a medium bowl, combine flour, sugar, salt, and baking powder. Add cubed cold butter and use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs.
  3. Stir in rolled oats, then set aside 1/2 cup of the mixture for the crumble topping.
  4. Press the remaining crumble mixture into the prepared pan to form the crust. Bake for 12–15 minutes, or until the crust is lightly golden. Remove from oven and set aside.
  5. In a small bowl, combine blueberries, lemon juice, and cornstarch. Gently stir to coat the berries.
  6. Spread the blueberry mixture evenly over the baked crust, then sprinkle white chocolate chips over the blueberries.
  7. Top with the reserved crumble mixture and return to the oven. Bake for an additional 25–30 minutes, or until the topping is golden brown and the blueberries are bubbling.
  8. Allow the bars to cool completely before slicing. Optionally, dust with powdered sugar before serving.

Notes

  • For extra flavor, add a teaspoon of vanilla extract to the crumble mixture.
  • If using frozen blueberries, thaw and drain them before mixing with the lemon juice and cornstarch.
  • These bars can be stored in an airtight container for up to 3 days or refrigerated for longer freshness.
