White Chocolate Blueberry Crumble Bars are a delicious dessert that combines sweet, juicy blueberries with creamy white chocolate and a buttery crumble topping. Perfect for summer, these bars are easy to make and perfect for a family treat or potluck.

- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup old-fashioned rolled oats
- 1 cup fresh blueberries
- 1/2 cup white chocolate chips
- 1/4 cup lemon juice
- 2 tbsp cornstarch
- 1/4 cup powdered sugar (for dusting, optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
- In a medium bowl, combine flour, sugar, salt, and baking powder. Add cubed cold butter and use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs.
- Stir in rolled oats, then set aside 1/2 cup of the mixture for the crumble topping.
- Press the remaining crumble mixture into the prepared pan to form the crust. Bake for 12–15 minutes, or until the crust is lightly golden. Remove from oven and set aside.
- In a small bowl, combine blueberries, lemon juice, and cornstarch. Gently stir to coat the berries.
- Spread the blueberry mixture evenly over the baked crust, then sprinkle white chocolate chips over the blueberries.
- Top with the reserved crumble mixture and return to the oven. Bake for an additional 25–30 minutes, or until the topping is golden brown and the blueberries are bubbling.
- Allow the bars to cool completely before slicing. Optionally, dust with powdered sugar before serving.
Notes
- For extra flavor, add a teaspoon of vanilla extract to the crumble mixture.
- If using frozen blueberries, thaw and drain them before mixing with the lemon juice and cornstarch.
- These bars can be stored in an airtight container for up to 3 days or refrigerated for longer freshness.
