Scale
- 4 cups watermelon, cubed and seeded
- 1/2 cup granulated sugar
- 1 tbsp lime juice (optional)
- Pinch of salt
Instructions
- Place the watermelon cubes in a blender or food processor and blend until smooth.
- Strain the mixture through a fine mesh sieve to remove pulp, if desired.
- In a small saucepan over low heat, dissolve the sugar in 1/4 cup of the watermelon juice. Let cool.
- Combine the cooled sugar mixture, remaining watermelon juice, lime juice (if using), and salt in a bowl. Stir well.
- Pour the mixture into a shallow dish or ice cream maker. If using a shallow dish, freeze for 3-4 hours, stirring every 30 minutes to break up ice crystals.
- Scoop and serve once the sorbet is firm and smooth.
Notes
- Use very ripe, sweet watermelon for best flavor.
- Lime juice adds a bright, tangy note but can be omitted.
- Store in an airtight container in the freezer for up to 1 week.
