Description

A refreshing and vibrant Watermelon Salad with Feta & Mint that combines juicy watermelon, crisp cucumber, creamy avocado, and tangy feta cheese, all enhanced with a zesty lime dressing and fresh herbs. Perfect for a light summer dish or a colorful side salad.

Ingredients

Scale

Dressing

  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons fresh lime juice
  • ½ garlic clove, minced
  • ¼ teaspoon sea salt

Salad

  • 5 cups cubed watermelon
  • Heaping 1 cup diced English cucumber
  • ¼ cup thinly sliced red onion
  • â…“ cup crumbled feta cheese
  • 1 avocado, cubed
  • â…“ cup torn fresh mint or basil leaves
  • ½ jalapeño or serrano pepper, thinly sliced (optional)
  • Sea salt, to taste

Instructions

  1. Make the dressing: In a small bowl, whisk together the extra-virgin olive oil, fresh lime juice, minced garlic, and sea salt until well combined.
  2. Assemble the salad: Arrange the cubed watermelon, diced English cucumber, and thinly sliced red onions on a large plate or serving platter.
  3. Dress the salad: Drizzle half of the prepared dressing over the arranged fruits and vegetables to lightly coat them.
  4. Add toppings: Sprinkle the crumbled feta cheese on top, followed by the cubed avocado and torn fresh mint or basil leaves. Add the sliced jalapeño or serrano pepper if using, for a touch of heat.
  5. Finish and serve: Drizzle the remaining dressing over the salad, season with additional sea salt to taste, and serve immediately to enjoy the fresh flavors.

Notes

  • For best results, use ripe watermelon and fresh herbs for maximum flavor.
  • The jalapeño or serrano pepper is optional; omit if you prefer a milder salad.
  • Can be prepared a few hours in advance but add avocado last to prevent browning.
  • Try substituting basil for mint if you want a different herbaceous note.
  • This salad is great as a light lunch or a side dish for BBQs and picnics.
