Description

  • 2 large eggs

  • 2 tablespoons unsalted butter, melted
  • 1/4 cup water
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. In a small bowl, dissolve the yeast and sugar in warm milk. Let it sit for 5-10 minutes, until foamy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture, eggs, vanilla extract, and melted butter.
  3. Mix the ingredients together until a soft dough forms. If the dough is too sticky, add a little more flour as needed.
  4. Knead the dough on a floured surface for about 5-7 minutes, or until it is smooth and elastic.
  5. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1-1.5 hours, or until it doubles in size.
  6. Once the dough has risen, punch it down and roll it out on a lightly floured surface to about 1/4-inch thickness.
  7. Cut the dough into small squares or rectangles (about 2-3 inches in size) using a knife or pizza cutter.
  8. In a deep pan or Dutch oven, heat the vegetable oil to 350°F (175°C). Carefully drop the dough pieces into the hot oil, frying a few at a time to avoid overcrowding.
  9. Fry the beignets for about 2-3 minutes per side, or until golden brown and puffed up.
  10. Remove the beignets from the oil with a slotted spoon and drain on a paper towel-lined plate.
  11. Generously dust the beignets with powdered sugar while they are still warm, and serve immediately.

Notes

  • For extra flavor, you can add a teaspoon of cinnamon to the dough.
