Description

Turkish Green Beans is a comforting and flavorful vegetable stew made by slowly simmering fresh green beans in a tomato and onion sauce infused with olive oil and herbs. This traditional Turkish side dish offers tender green beans with a savory, slightly tangy sauce, perfect for accompanying grilled meats or as a delicious vegetarian main course.

Ingredients

Scale

Vegetables

  • 2 onions, diced
  • 2 or 3 large tomatoes, chopped
  • 2 lb fresh green beans, trimmed
  • ½ cup fresh parsley, chopped

Seasonings & Liquids

  • ½ cup olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • ¾ cup water

Instructions

  1. Heat oil and sauté onions: Heat the olive oil in a Dutch oven or large skillet over medium heat. Add the diced onions once the oil is hot and cook them gently for 15 to 20 minutes, stirring occasionally, until they become tender and translucent.
  2. Add tomatoes and seasonings: Stir in the chopped tomatoes along with salt, black pepper, and dried oregano. Cook the mixture for about 2 minutes, allowing the tomatoes to soften and the flavors to meld.
  3. Simmer green beans: Pour in the water and add the trimmed green beans. Gently mix everything together, reduce the heat to low, cover the pot, and let it cook slowly for 45 to 60 minutes until the water is fully absorbed and the green beans are soft and tender. Adjust the seasoning with more salt and pepper if needed.
  4. Garnish and serve: Transfer the cooked green beans to a serving platter or a wide, shallow bowl. Sprinkle the chopped fresh parsley on top for a bright, herbal finish and serve warm.

Notes

  • For firmer beans, reduce the simmering time slightly.
  • You can add a squeeze of lemon juice before serving to brighten the flavors.
  • Use fresh oregano if available for a more aromatic taste.
  • This dish pairs well with rice or crusty bread.
  • Leftovers can be refrigerated for up to 3 days and reheated gently.
