Ingredients

Scale

Salad Ingredients

  • 1 (20-ounce) package refrigerated cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mozzarella pearls or cubed mozzarella
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped (for garnish)

Dressing

  • 1/2 cup Italian dressing (homemade or store-bought)

Seasoning

  • Salt and black pepper to taste

Instructions

  1. Cook the tortellini: Bring a large pot of salted water to a boil and cook the cheese tortellini according to the package instructions until al dente, usually about 7 to 9 minutes. Drain well and rinse under cold water to stop the cooking process and cool the pasta.
  2. Combine the salad ingredients: In a large mixing bowl, add the cooled tortellini, halved cherry tomatoes, diced cucumber, sliced black olives, diced red bell pepper, finely chopped red onion, mozzarella pearls, and grated Parmesan cheese. Mix gently to combine all ingredients evenly.
  3. Add dressing and season: Pour the Italian dressing over the salad mixture. Toss everything gently but thoroughly until the salad is evenly coated with the dressing. Taste and season with salt and black pepper according to your preference.
  4. Chill the salad: Cover the bowl with plastic wrap or a lid and refrigerate the salad for at least 30 minutes. This resting time allows the flavors to meld and enhances the taste.
  5. Garnish and serve: Just before serving, sprinkle the chopped fresh basil over the salad for a burst of herbal freshness and color. Serve chilled as a flavorful side dish.

Notes

  • For extra protein, add grilled chicken or salami to make it a more substantial dish.
  • Use tri-color tortellini for a more festive and colorful presentation.
  • This salad can be made up to 24 hours ahead; just toss again before serving to redistribute the dressing.
