Description

Tomato, Onion, and Cucumber Salad is a simple, refreshing, and crisp salad made with fresh vegetables and a light vinaigrette. It’s the perfect side dish for summer meals, barbecues, or a quick healthy snack.


Ingredients

  • 2 cups cherry tomatoes, halved or 3 large tomatoes, chopped
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
  • 1 tbsp chopped fresh parsley or basil (optional)

Instructions

  1. In a large bowl, combine tomatoes, cucumber, and red onion.
  2. In a small bowl, whisk together olive oil, red wine vinegar (or lemon juice), oregano, salt, and pepper.
  3. Pour the dressing over the vegetables and toss gently to coat.
  4. Garnish with fresh herbs, if using.
  5. Let sit for 10–15 minutes before serving for best flavor.

Notes

  • Use English or Persian cucumbers for less bitterness and fewer seeds.
  • Add feta cheese or olives for a Mediterranean twist.
