Description

The Best Hobo Casserole is a hearty, comforting dish featuring ground beef, mixed vegetables, and diced potatoes all baked together in a creamy mushroom soup base. Topped with melted cheese, this casserole is perfect for a satisfying family meal.

Ingredients

Scale

Meat and Vegetables

  • 1 lb ground beef
  • 1 large onion, chopped
  • 1 cup frozen mixed vegetables
  • 2 cups potatoes, diced

Other Ingredients

  • 1 can cream of mushroom soup
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready when your casserole mixture is assembled.
  2. Brown the Beef: In a large skillet over medium heat, brown the ground beef, stirring occasionally to break it up. Once cooked through, drain any excess fat to keep the casserole from being greasy.
  3. Sauté the Onion: Add the chopped onion to the same skillet with the beef. Cook for 3-4 minutes until the onions become soft and translucent, which enhances their flavor.
  4. Add Vegetables & Potatoes: Stir in the frozen mixed vegetables and diced potatoes into the skillet. Season everything with salt and pepper. Then mix in the can of cream of mushroom soup thoroughly until all ingredients are well combined.
  5. Assemble & Bake: Pour the entire mixture into a greased baking dish. Cover the dish with aluminum foil to keep moisture in and bake in the preheated oven for 30 minutes, allowing the flavors to meld and the potatoes to cook through.
  6. Add Cheese (Optional): If you choose to include cheese, remove the foil after 30 minutes. Sprinkle the shredded cheese evenly over the top of the casserole and return to the oven for an additional 10 minutes until the cheese is melted, bubbly, and golden brown.
  7. Serve: Remove the casserole from the oven and let it cool for a few minutes to set. Serve warm and enjoy this comforting, hearty meal with your family or guests.

Notes

  • You can substitute cream of mushroom soup with cream of celery or cream of chicken for a different flavor.
  • For a lower fat version, use lean ground beef or ground turkey and reduced-fat cheese.
  • Feel free to add other vegetables such as corn or peas based on your preference.
  • Make sure the potatoes are diced small to ensure they cook thoroughly within the baking time.
  • This dish reheats well and can be stored in the refrigerator for up to 3 days.
