Description

A flavorful Thai-inspired dish featuring tender chicken coated in a rich, creamy peanut sauce. Perfect for weeknight dinners or meal prep.

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp vegetable oil
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/3 cup water
  • 1 tbsp lime juice
  • Chopped peanuts and green onions for garnish

Instructions

  1. Heat vegetable oil in a skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 6-8 minutes.
  2. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, red pepper flakes, and water until smooth.
  3. Reduce heat to medium, pour sauce over the chicken, and stir to coat.
  4. Simmer for 3-5 minutes until the sauce thickens slightly.
  5. Stir in lime juice and remove from heat.
  6. Serve over rice or noodles, garnished with chopped peanuts and green onions.
