- 1 1/2 lbs boneless, skinless chicken thighs or breasts
- 1 tablespoon vegetable oil
- For the sauce:
- 1/3 cup soy sauce
- 1/4 cup mirin (or rice vinegar with 1 tsp sugar)
- 2 tablespoons brown sugar
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)
- Sliced green onions and sesame seeds for garnish (optional)
Instructions
- In a small bowl, whisk together soy sauce, mirin, brown sugar, honey, garlic, and ginger. Set aside.
- Heat oil in a large skillet over medium-high heat. Add chicken and cook 5–6 minutes per side, until browned and cooked through. Remove and slice if desired.
- Reduce heat to medium. Add the sauce to the pan and bring to a simmer. Stir in cornstarch slurry if using, and cook until sauce thickens slightly, about 2–3 minutes.
- Return chicken to the pan, turning to coat in sauce.
- Serve over rice or vegetables, garnished with sesame seeds and green onions if desired.
Notes
- Use chicken thighs for juicier, more flavorful results.
- Marinate the chicken in the sauce for 30 minutes before cooking for deeper flavor.
- Leftovers make great meal prep bowls with rice and steamed veggies.
