Scale
Main Ingredients
- 2 cups cooked chicken, shredded or cubed (preferably rotisserie chicken)
- 2 cups cooked white or brown rice
- 1/2 cup teriyaki sauce (store-bought or homemade)
- 1 cup frozen peas and carrots (or mixed vegetables)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 1 tbsp olive oil (for greasing the baking dish)
Optional Toppings
- 1/2 cup chopped green onions
- 1 cup shredded cheddar cheese or mozzarella
Instructions
- Preheat and prepare dish: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with 1 tablespoon of olive oil to prevent sticking.
- Combine ingredients: In a large mixing bowl, thoroughly mix the cooked shredded or cubed chicken, cooked rice, teriyaki sauce, frozen peas and carrots, garlic powder, onion powder, and a pinch of salt and pepper until evenly combined.
- Assemble casserole: Pour the chicken and rice mixture evenly into the prepared baking dish and spread it out smoothly for uniform cooking.
- Add toppings: Sprinkle the shredded cheese over the top, followed by the chopped green onions, if using, to add flavor and texture.
- Initial bake: Cover the casserole tightly with aluminum foil and bake in the preheated oven for 20-25 minutes, allowing the casserole to heat through and the flavors to meld.
- Finish baking: Remove the foil and continue baking for another 5-7 minutes, until the cheese topping is melted, bubbly, and lightly browned for a delicious finish.
- Cool and serve: Let the casserole cool for a few minutes to set before slicing and serving, ensuring clean portions and the best taste experience.
Notes
- You can substitute rotisserie chicken with any cooked chicken you have on hand.
- For a lower-calorie option, use brown rice and reduced-fat cheese.
- Feel free to add other vegetables such as bell peppers or corn for extra nutrition and color.
- If you want a stronger teriyaki flavor, increase the teriyaki sauce by a few tablespoons.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
