- ½ cup cherry tomatoes, halved
- ¼ cup thinly sliced red onion

Dressing Ingredients
- 2 tablespoons extra virgin olive oil
- 1 tablespoon white wine vinegar or lemon juice
- 1 teaspoon Dijon mustard

Instructions
- Blanch the Asparagus: Bring a pot of salted water to a boil. Add the asparagus pieces and blanch for 2–3 minutes, just until they turn bright green and become tender-crisp.
- Shock the Asparagus: Drain the asparagus promptly and transfer it to a bowl of ice water to halt the cooking process. Once fully cooled, drain well and pat dry with a clean towel to remove excess water.
- Prepare the Dressing: In a large bowl, whisk together the extra virgin olive oil, white wine vinegar or lemon juice, Dijon mustard, salt, and black pepper until the dressing is well combined and emulsified.
- Toss the Salad: Add the blanched asparagus, cherry tomatoes, thinly sliced red onion, and chopped fresh tarragon to the bowl with the dressing. Toss gently to evenly coat all the ingredients with the flavorful dressing.
- Add Feta and Chill: Sprinkle crumbled feta cheese on top, if using. Cover the salad and chill for 20–30 minutes before serving to allow the flavors to meld for the best taste.
