Description

This comforting Taco Casserole with Tortillas is a layered baked dish combining seasoned ground beef, black beans, corn, diced tomatoes, and salsa, all nestled between soft flour tortillas and topped with melted Mexican blend cheese. Perfect for a family dinner, it’s easy to prepare and full of vibrant Tex-Mex flavors, finished off with optional fresh toppings for added zest.

Ingredients

Scale

Main Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes (10 oz)
  • 1 cup salsa
  • 6 small flour tortillas, cut into halves or quarters
  • 2 cups shredded Mexican blend cheese

Optional Toppings

  • Chopped green onions
  • Sour cream
  • Diced tomatoes
  • Sliced jalapeños
  • Fresh cilantro

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the casserole.
  2. Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until it is fully browned. Drain any excess fat. Add the taco seasoning mix and water to the skillet, stirring to combine. Let it simmer for 2-3 minutes to develop the flavors.
  3. Prepare the Filling: Stir the drained black beans, corn, diced tomatoes, and salsa into the seasoned beef mixture. Mix well and allow it to simmer for another 2-3 minutes to blend all the ingredients thoroughly.
  4. Assemble the Casserole: Grease a 9×13-inch baking dish. Start by layering the bottom with the tortilla pieces. Spread half of the beef mixture over the tortillas, then sprinkle 1 cup of shredded cheese on top. Repeat the layering with the remaining tortilla pieces, beef mixture, and finish with the last cup of shredded cheese.
  5. Bake: Cover the baking dish with foil and place it in the oven. Bake for 20 minutes covered, then remove the foil and continue baking for another 10 minutes until the cheese is bubbly and slightly golden.
  6. Serve: Remove from the oven and garnish with your choice of optional toppings such as chopped green onions, sour cream, diced tomatoes, sliced jalapeños, and fresh cilantro. Serve warm and enjoy your hearty taco casserole.

Notes

  • For a spicier kick, add sliced jalapeños inside the casserole layers or as a topping.
  • You can substitute ground turkey or chicken for ground beef for a leaner option.
  • Use corn tortillas instead of flour tortillas to make the dish gluten-free.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best results.
  • If you prefer extra crispy edges, uncover the casserole for the last 15 minutes of baking.
