Scale
Main Ingredients
- 1 (32-ounce) bag frozen tater tots
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- ½ teaspoon salt
- 1 (10-ounce) can diced tomatoes with green chilies, drained
- 1½ cups shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
Toppings
- ½ cup sour cream
- 1 avocado, diced
- ¼ cup sliced black olives
- ¼ cup chopped fresh cilantro
- ¼ cup sliced green onions
- Pickled jalapeños (optional)
Instructions
- Prepare the tater tots: Preheat your oven to 425°F. Spread the frozen tater tots evenly on a baking sheet in a single layer. Bake them according to the package instructions, typically about 25 to 30 minutes, until they are golden brown and crispy.
- Cook the beef mixture: While the tots bake, heat olive oil in a skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened. Add the minced garlic and sauté for 30 seconds until fragrant. Add the ground beef, breaking it apart with a spoon, and cook until fully browned and no longer pink.
- Season and simmer: Stir in the taco seasoning, salt, and the drained diced tomatoes with green chilies. Let the mixture simmer for 2 to 3 minutes to combine the flavors, then remove the skillet from heat.
- Assemble the tachos: Once the tater tots are crispy, transfer them to an oven-safe dish or skillet. Evenly spoon the taco meat mixture over the tots, then sprinkle shredded cheddar and Monterey Jack cheeses on top.
- Melt the cheese: Return the assembled dish to the oven and bake for an additional 5 to 7 minutes, or until the cheese is fully melted and bubbly.
- Add toppings and serve: Remove from the oven and immediately top with sour cream, diced avocado, sliced black olives, chopped cilantro, sliced green onions, and pickled jalapeños if desired. Serve hot for the best flavor and texture.
Notes
- For a vegetarian version, swap ground beef for ground turkey or use black beans as a protein alternative.
- Customize your toppings with shredded lettuce, diced tomatoes, or a drizzle of queso for additional flavor.
- If you prefer spicier tachos, add extra jalapeños or hot sauce to taste.
- Using an oven-safe skillet to bake the assembled dish helps reduce cleanup and keeps everything warm.
