Description

Sweetened Condensed Milk Rolls are soft, fluffy, and lightly sweetened bread rolls made with a rich dough incorporating sweetened condensed milk. These delightful rolls are perfect for breakfast or as a snack, featuring a tender crumb and a subtle vanilla flavor with a beautiful golden crust thanks to an egg wash finish.

Ingredients

Scale

Dough Ingredients

  • 4 cups all-purpose flour
  • 1 tablespoon active dry yeast
  • 1/4 cup warm water (110°F / 45°C)
  • 1/2 cup sweetened condensed milk
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract

Egg Wash

  • 1 egg
  • 1 tablespoon water

Instructions

  1. Dissolve yeast: In a small bowl, dissolve the active dry yeast in the warm water (110°F / 45°C) and let it sit for about 5 minutes until it becomes frothy, indicating the yeast is active.
  2. Mix wet ingredients: In a large bowl, combine sweetened condensed milk, melted unsalted butter, granulated sugar, eggs, vanilla extract, and salt. Mix these ingredients thoroughly until well combined.
  3. Add yeast mixture: Pour the frothy yeast mixture into the large bowl with the wet ingredients and mix thoroughly to incorporate.
  4. Add flour gradually: Gradually add the all-purpose flour, one cup at a time, mixing well after each addition until a soft dough forms. Add extra flour if the dough is too sticky to handle.
  5. Knead the dough: Turn the dough onto a lightly floured surface and knead for 8-10 minutes until the dough is smooth and elastic, which develops gluten for a good structure.
  6. First rise: Place the kneaded dough into a lightly greased bowl, cover it, and let it rise in a warm place for 1 to 1.5 hours or until it has doubled in size.
  7. Punch down and divide: Once risen, punch the dough down gently to remove excess air. Divide into 12 equal pieces and roll each piece into a smooth ball.
  8. Arrange rolls: Place the dough balls on a greased baking sheet or baking pan, leaving space between each to allow for expansion while baking.
  9. Second rise: Cover the dough balls with a clean kitchen towel and let them rise again for 30 minutes or until they double in size.
  10. Preheat oven: Preheat your oven to 350°F (180°C) to prepare for baking.
  11. Prepare egg wash: In a small bowl, whisk together one egg with a tablespoon of water to create an egg wash for a glossy finish.
  12. Apply egg wash: Brush the tops of each roll generously with the egg wash to encourage browning and shine.
  13. Bake rolls: Bake the rolls in the preheated oven for 18-20 minutes or until golden brown and hollow sounding when tapped on the bottom, indicating they are cooked through.
  14. Cool and serve: Remove the rolls from the oven, let them cool slightly on a wire rack, then serve warm or at room temperature.

Notes

  • The warm water temperature is critical to activate yeast; too hot may kill it, too cold slows activation.
  • Additional flour can be added a tablespoon at a time if dough is too sticky but avoid making it too dry.
  • Letting the dough rise twice ensures light and fluffy rolls.
  • Egg wash gives the rolls an attractive golden color and glossy finish.
  • For enhanced flavor, you can brush melted butter on the rolls after baking.
  • Store leftovers in an airtight container and reheat gently before serving.
