Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough for roasting the potatoes until crispy.
- Boil Potatoes: Place the baby potatoes in a large pot of salted water and boil for 15–20 minutes, or until they are fork-tender. This softens the potatoes so they can be smashed easily.
- Drain and Dry: Drain the cooked potatoes in a colander and let them sit for 5 minutes to slightly dry so they’ll crisp up better in the oven.
- Smash Potatoes: Transfer the potatoes onto a greased or parchment-lined baking sheet. Using the bottom of a glass or measuring cup, gently press each potato until it is smashed but still intact, creating a flat surface for roasting.
- Prepare Glaze: In a small bowl, whisk together olive oil, melted butter, honey, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper to create a flavorful glaze.
- Coat Potatoes: Generously brush the spicy honey glaze over each smashed potato, ensuring they’re well coated for maximum flavor and crispiness.
- Roast: Roast the glazed potatoes in the preheated oven for 20–25 minutes, or until they are crispy and golden brown around the edges.
- Garnish and Serve: Remove from oven and sprinkle with chopped fresh parsley and flaky sea salt if desired. Serve immediately for best taste.
