Description

Delight in these festive Sugar Cookie Rice Krispies, a fun twist on the classic treat combining the nostalgic flavors of sugar cookies with crispy marshmallow goodness. Perfect for holiday celebrations or anytime you crave a sweet, crunchy snack.

Ingredients

Scale

Base

  • ½ cup butter
  • ½ cup sugar cookie mix (dry mix from the pouch)
  • 1 bag marshmallows (10 ounces, about 40 large marshmallows)
  • 6 cups Rice Krispies Cereal

Mix-ins & Decoration

  • â…“ cup mini marshmallows
  • 2 tbsp sprinkles (Christmas or other color)
  • Additional sprinkles for decoration

Instructions

  1. Prepare Pan: Grease a 9″x13″ baking tray with cooking spray or line it with parchment paper to prevent sticking and make removal easier.
  2. Melt Butter: Place a large pot on low heat and melt the ½ cup butter slowly to avoid burning.
  3. Add Sugar Cookie Mix: Stir in the ½ cup sugar cookie dry mix continuously, cooking for about 1 minute to combine evenly with the melted butter.
  4. Incorporate Marshmallows: Add the entire 10-ounce bag of large marshmallows to the pot. Stir continuously until they are fully melted and form a smooth, sugar cookie-flavored mixture with the butter.
  5. Mix Cereal: Remove the pot from heat, then add 6 cups of Rice Krispies Cereal. Gently fold the mixture together using a spatula or wooden spoon. To prevent sticking, lightly spray the spatula with cooking spray before mixing.
  6. Add Mini Marshmallows & Sprinkles: Stir in â…“ cup mini marshmallows and 2 tablespoons of festive sprinkles. Some mini marshmallows will melt slightly, lending texture to the treats.
  7. Shape Mixture: Spread the mixture evenly into the prepared baking pan. Press gently to create an even layer, being careful not to compress it too much, preserving its light and crispy texture.
  8. Decorate: Sprinkle additional sprinkles generously on top to enhance the festive appearance and add extra color and fun.
  9. Cool & Serve: Let the treats cool for at least 30 minutes until set. Slice into 18 to 24 squares and serve your delicious Sugar Cookie Rice Krispies!

Notes

  • Use cooking spray on utensils to prevent sticky marshmallow messes when mixing.
  • Do not over-press the mixture in the pan to keep the treats light and crunchy.
  • For variation, try different colored or themed sprinkles for holidays or events.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • Ensure low heat when melting marshmallows to avoid burning and a bitter taste.
