Description

Delightfully soft and sweet strawberry rolls filled with luscious strawberry jam and fresh chopped strawberries, topped with a smooth cream cheese icing. Perfect for a comforting breakfast or an indulgent dessert, these rolls combine a tender yeast dough with the fresh flavors of summer berries and creamy sweetness.

Ingredients

Scale

Dough Ingredients

  • ½ cup milk
  • 1 teaspoon active dry yeast
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • ¼ teaspoon salt
  • ¼ cup unsalted butter or margarine, softened to room temperature
  • 1 egg

Filling Ingredients

  • ¾ cup strawberry jam
  • 1 cup strawberries, fresh and chopped into small pieces

Cream Cheese Icing Ingredients

  • ½ cup cream cheese, at room temperature
  • 3 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1½ cups powdered sugar

Instructions

  1. Activate Yeast: Warm the milk in the microwave for 30 seconds until lukewarm. Stir in the active dry yeast and let it sit for about 5 minutes until the yeast dissolves and becomes frothy.
  2. Mix Dough: In a stand mixer bowl, combine the flour, sugar, and salt. Add the softened butter, egg, and the yeast mixture. Using the dough hook, knead for 3-5 minutes until the dough is elastic and soft.
  3. First Rise: Place the dough in an oiled bowl and cover it with plastic wrap. Let it rise in a warm place until doubled in size. To speed up the process, place the bowl in a warm oven (preheat to 350°F for 1 minute, then turn off) and let it rise there.
  4. Prepare Baking Dish: Butter a 9-inch pie plate or cast-iron skillet to prevent sticking and for added flavor.
  5. Roll and Fill: Roll the dough out into an 18 by 12-inch rectangle. Spread the strawberry jam evenly over the dough, then sprinkle the chopped fresh strawberries on top.
  6. Shape Rolls: Starting from the far side, carefully roll the dough towards you into a tight log. Pinch the end closed to seal. Cut the log into 8 equal rolls.
  7. Second Rise: Place the rolls in the prepared baking dish, leaving a little space between each. Cover with plastic wrap and let them rise again until doubled, using the warm oven method if desired.
  8. Prepare Icing: In a mixer bowl, combine the cream cheese, softened butter, vanilla extract, and powdered sugar. Mix until smooth and creamy. Adjust the consistency with a little milk or more powdered sugar if needed.
  9. Bake Rolls: Preheat your oven to 350°F. Bake the rolls for 30 minutes or until they turn golden brown and cooked through.
  10. Ice and Serve: Allow the rolls to cool for 10 minutes after baking. Drizzle the cream cheese icing generously over the top, then serve warm and enjoy.

Notes

  • Using a warm oven to proof the dough helps maintain an ideal temperature for yeast activation.
  • Ensure butter and cream cheese are softened to room temperature for smooth mixing.
  • Fresh strawberries add texture and extra sweetness; you can substitute with only jam if preferred.
  • Store leftover rolls in an airtight container and reheat gently before serving.
