Description

Strawberry Popcorn is a sweet and tangy treat, with crunchy popcorn coated in a smooth strawberry-flavored glaze, perfect for snacking or as a fun party treat.

Ingredients

Units Scale
  • 1/2 cup unpopped popcorn kernels
  • 1/4 cup unsalted butter
  • 1/2 cup strawberry gelatin (Jell-O)
  • 1/2 cup granulated sugar
  • 1/4 cup corn syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Red food coloring (optional, for brighter color)

Instructions

  1. Pop the popcorn kernels using your preferred method (stovetop, microwave, or popcorn machine). Set the popcorn aside in a large mixing bowl, removing any unpopped kernels.
  2. Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper or a silicone baking mat.
  3. In a medium saucepan, melt the butter over medium heat. Stir in the strawberry gelatin, granulated sugar, corn syrup, salt, and vanilla extract. Bring the mixture to a simmer and cook for 3-5 minutes, stirring constantly, until the sugar has dissolved and the mixture is smooth.
  4. If using, add a few drops of red food coloring to the strawberry glaze for a brighter color.
  5. Pour the strawberry glaze evenly over the popped popcorn, tossing gently to coat the popcorn with the mixture. Make sure all of the popcorn is covered.
  6. Transfer the coated popcorn onto the prepared baking sheet, spreading it out in an even layer.
  7. Bake in the preheated oven for 45 minutes, stirring every 15 minutes to ensure even coating and prevent burning.
  8. Once baked, remove the popcorn from the oven and allow it to cool completely on the baking sheet before serving.
  9. Store any leftover strawberry popcorn in an airtight container for up to 3-4 days.

Notes

  • Be sure to stir the popcorn every 15 minutes while baking to avoid the coating from becoming sticky or burning.
  • If you’d like a tangier flavor, you can increase the amount of strawberry gelatin slightly, or add a pinch of citric acid.
  • This recipe can be made with different flavored gelatin for variety, such as raspberry or cherry.
