Description

This Strawberry Poke Cake is soft, moist, and bursting with strawberry flavor in every bite. Made with fluffy white cake, strawberry JELL-O, and a creamy whipped topping, it’s the perfect easy dessert for spring, summer, or any time you need a colorful and delicious treat!


Ingredients

  • 1 box white cake mix (plus ingredients listed on the box – usually eggs, oil, and water)

  • 1 (3 oz) box strawberry JELL-O gelatin

  • 1 cup boiling water

  • 1/2 cup cold water

  • 1 tub (8 oz) whipped topping (like Cool Whip), thawed

  • 1 cup fresh strawberries, chopped (optional for garnish)


Instructions

  • Bake the cake: Prepare and bake the white cake in a 9×13-inch pan according to package directions. Let it cool for 15 minutes.

  • Poke holes: Using the handle of a wooden spoon or a fork, poke holes all over the top of the cake.

  • Make JELL-O: In a bowl, dissolve the strawberry JELL-O in 1 cup of boiling water. Stir in 1/2 cup of cold water.

  • Pour over cake: Slowly pour the JELL-O mixture over the cake, letting it soak into the holes. Cover and refrigerate for at least 4 hours, or overnight for best results.

  • Top with whipped topping: Spread the thawed whipped topping evenly over the chilled cake.

 

  • Garnish: Top with chopped fresh strawberries if desired. Slice and serve chilled!


Notes

  • You can swap in other JELL-O flavors like raspberry or cherry.

  • Want more strawberries? Add a layer of sliced strawberries under the whipped topping.
