Description
This old-fashioned Strawberry Pie is made with fresh strawberries and a simple homemade glaze inside a buttery pie crust. It’s light, fruity, and bursting with sweet berry flavor. Serve it with whipped cream for a crowd-pleasing dessert that screams summer!
Ingredients
For the Pie:

1 pre-baked 9-inch pie crust (homemade or store-bought)

1 1/2 lbs fresh strawberries, hulled (about 4 cups)

3/4 cup granulated sugar

3 tbsp cornstarch

1 cup water
-
3 tbsp strawberry-flavored gelatin (like Jell-O)

Whipped cream, for topping (optional)
Instructions

Prep the strawberries:

Slice half of the strawberries and set aside. Leave the other half whole or halved for the pie’s top layer.

Make the glaze:

In a saucepan, whisk together sugar and cornstarch.

Stir in the water and cook over medium heat, stirring constantly, until the mixture thickens and starts to boil.

Remove from heat and whisk in the strawberry gelatin until fully dissolved. Let cool for about 10 minutes.

Assemble the pie:

Arrange the whole or halved strawberries in the baked pie crust.

Pour the cooled glaze evenly over the berries, using a spoon to make sure all strawberries are coated.

Refrigerate for at least 4 hours, or until the glaze is set.

For a thicker glaze, add an extra ½ tbsp of cornstarch.
