Description

3 large eggs

For the Filling:

8 oz cream cheese (softened)

1 (8 oz) container whipped topping (like Cool Whip)

1 (3.4 oz) box vanilla pudding mix (instant)

1 cup milk

2 tablespoons powdered sugar (optional)

For the Strawberry Topping:

1 lb fresh strawberries, hulled and sliced

1/4 cup granulated sugar (or to taste)

2 tablespoons lemon juice (optional, to enhance flavor)


Instructions

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.

  2. Prepare the cake mix according to the package instructions, using water, oil, and eggs. Pour the batter into the prepared baking dish.

  3. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  4. Once the cake is baked, allow it to cool completely in the pan. After it cools, use a fork to poke holes all over the cake.

For the Filling:

  1. In a medium bowl, beat the softened cream cheese until smooth.

  2. In a separate bowl, whisk together the vanilla pudding mix and milk. Add the pudding mixture to the cream cheese, and beat until smooth.

  3. Fold in the whipped topping until fully combined. If you’d like a sweeter filling, you can add powdered sugar to taste.

For the Strawberry Topping:

  1. In a small bowl, combine the sliced strawberries, sugar, and lemon juice. Stir to coat the strawberries in the sugar, and let it sit for about 10 minutes to create a syrupy glaze.

Assemble the Cake:

  1. Spread the cream cheese filling evenly over the cooled cake, making sure it fills in the holes.

  2. Spoon the strawberry mixture (with juices) over the top of the cake, covering it completely.
