Ingredients
For the Cake:
1 box white cake mix (or homemade white cake if preferred)
1 cup water (or as directed on the cake mix)
1/2 cup vegetable oil
3 large eggs
For the Filling:
8 oz cream cheese (softened)
1 (8 oz) container whipped topping (like Cool Whip)
1 (3.4 oz) box vanilla pudding mix (instant)
1 cup milk
2 tablespoons powdered sugar (optional)
For the Strawberry Topping:
1 lb fresh strawberries, hulled and sliced
1/4 cup granulated sugar (or to taste)
2 tablespoons lemon juice (optional, to enhance flavor)
Instructions
For the Cake:
-
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
-
Prepare the cake mix according to the package instructions, using water, oil, and eggs. Pour the batter into the prepared baking dish.
-
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
-
Once the cake is baked, allow it to cool completely in the pan. After it cools, use a fork to poke holes all over the cake.
For the Filling:
-
In a medium bowl, beat the softened cream cheese until smooth.
-
In a separate bowl, whisk together the vanilla pudding mix and milk. Add the pudding mixture to the cream cheese, and beat until smooth.
-
Fold in the whipped topping until fully combined. If you’d like a sweeter filling, you can add powdered sugar to taste.
For the Strawberry Topping:
-
In a small bowl, combine the sliced strawberries, sugar, and lemon juice. Stir to coat the strawberries in the sugar, and let it sit for about 10 minutes to create a syrupy glaze.
Assemble the Cake:
-
Spread the cream cheese filling evenly over the cooled cake, making sure it fills in the holes.
-
Spoon the strawberry mixture (with juices) over the top of the cake, covering it completely.
-
Refrigerate the cake for at least 2 hours (preferably overnight) to allow the flavors to meld and the cake to fully set.
Notes
-
This cake is best served chilled, making it perfect for warm weather gatherings or make-ahead parties.
-
If you want to make this dessert even more indulgent, you can drizzle a little extra strawberry syrup or whipped cream on top when serving.
-
For added texture, consider adding crushed graham crackers or chopped nuts to the layers.
