Ingredients
Scale
Roll-Ups
- 8 slices white or brioche sandwich bread, crusts removed
- ½ cup cream cheese, softened
- 1 cup diced fresh strawberries
Egg Mixture
- 2 large eggs
- ¼ cup milk
- 1 tablespoon granulated sugar
- ½ teaspoon vanilla extract
- ½ teaspoon ground cinnamon
For Cooking and Serving
- 1 tablespoon butter (for cooking)
- Powdered sugar for dusting (optional)
Instructions
- Prepare the Bread: Flatten each slice of bread with a rolling pin until thin and pliable to facilitate easy rolling without tearing.
- Assemble the Roll-Ups: Spread a thin layer of softened cream cheese over each flattened slice. Spoon about 1 tablespoon of diced fresh strawberries along one edge, then roll up tightly, sealing the edge to keep the filling inside during cooking.
- Make the Egg Mixture: In a shallow bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, and ground cinnamon until smooth and well combined.
- Cook the Roll-Ups: Heat butter in a large skillet over medium heat. Dip each roll-up in the egg mixture, coating all sides thoroughly. Place the roll-ups seam-side down in the skillet. Cook each side for 2–3 minutes until golden and crisp, turning carefully to brown evenly on all sides.
- Serve: Remove the roll-ups from the skillet. Dust with powdered sugar if desired and serve warm. They are delicious on their own or accompanied by maple syrup or yogurt for dipping.
Notes
- You can substitute Nutella or peanut butter for the cream cheese for a different flavor.
- Try using other fruits such as blueberries or bananas as filling instead of strawberries.
- Serve with maple syrup or yogurt to enhance the taste.
