Description

Strawberry French Toast Roll-Ups are a delightful twist on classic French toast, featuring creamy cream cheese and fresh strawberries wrapped inside soft bread and cooked to golden perfection. This easy-to-make breakfast treat combines sweet, tangy, and creamy flavors with a crispy outside, perfect for a weekend brunch or special morning indulgence.

Ingredients

Scale

Roll-Ups

  • 8 slices white or brioche sandwich bread, crusts removed
  • ½ cup cream cheese, softened
  • 1 cup diced fresh strawberries

Egg Mixture

  • 2 large eggs
  • ¼ cup milk
  • 1 tablespoon granulated sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon

For Cooking and Serving

  • 1 tablespoon butter (for cooking)
  • Powdered sugar for dusting (optional)

Instructions

  1. Prepare the Bread: Flatten each slice of bread with a rolling pin until thin and pliable to facilitate easy rolling without tearing.
  2. Assemble the Roll-Ups: Spread a thin layer of softened cream cheese over each flattened slice. Spoon about 1 tablespoon of diced fresh strawberries along one edge, then roll up tightly, sealing the edge to keep the filling inside during cooking.
  3. Make the Egg Mixture: In a shallow bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, and ground cinnamon until smooth and well combined.
  4. Cook the Roll-Ups: Heat butter in a large skillet over medium heat. Dip each roll-up in the egg mixture, coating all sides thoroughly. Place the roll-ups seam-side down in the skillet. Cook each side for 2–3 minutes until golden and crisp, turning carefully to brown evenly on all sides.
  5. Serve: Remove the roll-ups from the skillet. Dust with powdered sugar if desired and serve warm. They are delicious on their own or accompanied by maple syrup or yogurt for dipping.

Notes

  • You can substitute Nutella or peanut butter for the cream cheese for a different flavor.
  • Try using other fruits such as blueberries or bananas as filling instead of strawberries.
  • Serve with maple syrup or yogurt to enhance the taste.
