Description

Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • 1 cup fresh strawberries, hulled and sliced

  • 1/4 cup balsamic vinegar

  • 2 tablespoons honey or maple syrup

  • 2 tablespoons Dijon mustard

  • 1 teaspoon fresh thyme or rosemary (optional)

  • 1 tablespoon butter

 

  • Fresh parsley for garnish (optional)


Instructions

  • Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper. Cook the chicken for 6-7 minutes on each side, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C). Remove the chicken from the skillet and set aside.

  • Make the Strawberry Glaze: In the same skillet, add the sliced strawberries, balsamic vinegar, honey, Dijon mustard, and thyme or rosemary (if using). Stir the mixture and bring it to a simmer. Cook for 4-5 minutes, until the strawberries soften and the sauce thickens slightly.

Notes

You can use chicken thighs for a juicier, more flavorful option.
