Ingredients
Scale
Wet Ingredients
- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- ½ cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract (optional)
- green food coloring (as desired)
Dry Ingredients
- 2½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
Add-ins
- 1 cup white chocolate chips
- ½ cup green M&M’s or green sprinkles
- ¼ cup crushed mint candies or Andes mints (optional)
Instructions
- Preheat Oven and Prepare Pans: Preheat your oven to 350°F (177°C) and line two baking sheets with parchment paper to prevent sticking and for easy cleanup.
- Cream Butter and Sugars: In a large mixing bowl, beat together the softened unsalted butter, granulated sugar, and light brown sugar until the mixture becomes light and fluffy, which usually takes about 3–5 minutes using an electric mixer.
- Add Eggs and Extracts: Beat in the eggs one at a time to fully incorporate each before adding the next. Stir in the vanilla extract and optional almond extract to enhance the flavor. Mix in green food coloring gradually until you achieve your desired vibrant green shade.
- Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt to ensure even distribution of the leavening agents and seasoning.
- Combine Wet and Dry Mixtures: Slowly add the dry ingredient mixture into the wet ingredients while stirring gently until just combined. Avoid overmixing to keep the cookies tender.
- Fold in Add-ins: Carefully fold in the white chocolate chips, green M&M’s or green sprinkles, and the optional crushed mint candies or Andes mints to distribute them evenly throughout the dough.
- Scoop the Dough: Using a tablespoon or cookie scoop, portion out tablespoons of dough onto the lined baking sheets, spacing them about 2 inches apart to allow room for spreading.
- Bake: Place the baking sheets in the preheated oven and bake for 10–12 minutes or until the cookie edges are set and lightly golden while the centers remain slightly soft.
- Cool: Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely, which helps set the cookies and maintain their shape.
Notes
- For extra festivity, top each cookie with additional green M&M’s or sprinkles just before baking.
- Store the cookies in an airtight container at room temperature to keep them fresh for up to 5 days.
