Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, then add the vanilla extract, lemon zest, and lemon juice, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form the cookie dough.
- Pour the powdered sugar into a small bowl. Roll tablespoon-sized portions of dough into balls, then roll them in the powdered sugar, ensuring they are completely coated.
