Description

This Spinach Mushroom Orzo is a creamy, comforting dish made in one pan with tender orzo pasta, earthy mushrooms, and fresh spinach. It’s simple, satisfying, and packed with flavor—perfect as a vegetarian main or a hearty side. With just a handful of ingredients and under 30 minutes, you’ll have a dish that tastes like it came from a fancy bistro.

 


Ingredients

1 tbsp olive oil

1 tbsp butter

8 oz mushrooms, sliced (cremini or button work great)

2 cloves garlic, minced

1 cup orzo pasta

2 cups vegetable broth

2 cups fresh spinach, chopped

1/4 cup grated Parmesan cheese

Salt and pepper, to taste

Optional: a splash of cream or a sprinkle of red pepper flakes


Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.

  2. Add mushrooms and cook for 5–7 minutes, stirring occasionally, until browned and softened.

  3. Stir in garlic and cook for 1 more minute until fragrant.

  4. Add orzo and toast for 1–2 minutes, stirring to coat with the oil and butter.

  5. Pour in vegetable broth and bring to a simmer. Reduce heat to low, cover, and cook for 10–12 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.

  6. Stir in chopped spinach and cook until wilted, about 2 minutes.

  7. Remove from heat, mix in Parmesan, and season with salt and pepper to taste.

  8. Serve warm and enjoy!


Notes

For a richer flavor, stir in a splash of cream at the end.

 

Want it dairy-free? Skip the Parmesan or use a vegan cheese alternative.

 

Add cooked chicken, shrimp, or white beans for extra protein.
