Description

Special K Bars are a no-bake dessert made with crispy cereal, peanut butter, and a rich chocolate-butterscotch topping. These sweet, chewy bars are a nostalgic treat perfect for potlucks or quick snacks.


Ingredients

  • 6 cups Special K cereal
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips

Instructions

  1. Grease a 9×13-inch baking dish and set aside.
  2. In a large saucepan over medium heat, combine sugar and corn syrup. Stir constantly until the mixture begins to boil.
  3. Remove from heat and stir in peanut butter until smooth.
  4. Gently fold in the Special K cereal until evenly coated.
  5. Press the mixture evenly into the prepared baking dish.
  6. In a microwave-safe bowl, melt chocolate chips and butterscotch chips together in 30-second intervals, stirring between each until smooth.
  7. Pour the melted chocolate mixture over the cereal layer and spread evenly.
  8. Allow to cool completely at room temperature or chill in the fridge until set.
  9. Cut into bars and serve.

Notes

  • Use a nonstick spatula or wax paper to press the cereal mixture into the pan without sticking.
  • Store in an airtight container at room temperature for up to 5 days.
  • For a twist, add a pinch of sea salt on top of the chocolate layer before it sets.
