Special K Bars are a no-bake dessert made with crispy cereal, peanut butter, and a rich chocolate-butterscotch topping. These sweet, chewy bars are a nostalgic treat perfect for potlucks or quick snacks.

- 6 cups Special K cereal
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1 cup semisweet chocolate chips
- 1 cup butterscotch chips
Instructions
- Grease a 9×13-inch baking dish and set aside.
- In a large saucepan over medium heat, combine sugar and corn syrup. Stir constantly until the mixture begins to boil.
- Remove from heat and stir in peanut butter until smooth.
- Gently fold in the Special K cereal until evenly coated.
- Press the mixture evenly into the prepared baking dish.
- In a microwave-safe bowl, melt chocolate chips and butterscotch chips together in 30-second intervals, stirring between each until smooth.
- Pour the melted chocolate mixture over the cereal layer and spread evenly.
- Allow to cool completely at room temperature or chill in the fridge until set.
- Cut into bars and serve.
Notes
- Use a nonstick spatula or wax paper to press the cereal mixture into the pan without sticking.
- Store in an airtight container at room temperature for up to 5 days.
- For a twist, add a pinch of sea salt on top of the chocolate layer before it sets.
