Description

Soy Sauce Fried Rice (酱油炒饭) is a simple, flavorful Chinese-style fried rice made with basic ingredients and seasoned with soy sauce for a rich umami taste.


Ingredients

  • 3 cups cooked rice (preferably day-old)
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 2 cloves garlic, minced
  • 1/4 cup chopped green onions
  • Salt to taste
  • White pepper to taste

Instructions

  1. Heat 1 tablespoon of oil in a wok or large skillet over medium heat.
  2. Pour in the beaten eggs and scramble until just set. Remove and set aside.
  3. Add the remaining oil to the pan. Sauté the minced garlic until fragrant.
  4. Add the rice, breaking up any clumps, and stir-fry for 2–3 minutes.
  5. Pour in the soy sauce and dark soy sauce. Stir to evenly coat the rice.
  6. Add the scrambled eggs back to the pan and mix well.
  7. Season with salt and white pepper to taste.
  8. Stir in the chopped green onions and cook for another minute.
  9. Serve hot as a main or side dish.

Notes

  • Use cold, day-old rice for the best texture.
  • Dark soy sauce adds color and deeper flavor—adjust to taste.
  • You can add vegetables or protein like shrimp or chicken if desired.
