Description

Sopapilla Cheesecake Bars combine the flaky, buttery goodness of crescent roll dough with a creamy, sweetened cream cheese filling, topped with a cinnamon sugar blend for a delightful dessert that’s easy to make and perfect for any occasion.

Ingredients

Scale

Dough

  • 2 cans crescent roll dough (8 oz each)

Filling

  • 16 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 1 tsp vanilla extract

Topping

  • ½ cup unsalted butter (melted)
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Prepare Baking Dish: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. First Dough Layer: Unroll one can of crescent roll dough and press it evenly into the bottom of the baking dish, making sure to seal the seams to create a solid base layer.
  3. Make Filling: In a mixing bowl, use a mixer to beat the softened cream cheese, 1 cup granulated sugar, and vanilla extract together until the mixture is smooth, creamy, and well combined.
  4. Spread Filling: Evenly spread the cream cheese mixture over the dough layer in the baking dish to form a consistent filling.
  5. Top Dough Layer: Unroll the second can of crescent roll dough and carefully lay it over the cream cheese filling, gently pressing it down to fit the dish and cover the filling.
  6. Add Butter and Cinnamon Sugar: Pour the melted unsalted butter evenly over the top layer of dough. In a small bowl, combine the remaining ¼ cup sugar with 1 teaspoon ground cinnamon, then sprinkle this cinnamon sugar evenly over the buttered dough.
  7. Bake: Place the baking dish in the preheated oven and bake for 30–35 minutes, or until the top is golden brown and slightly crisp.
  8. Cool and Chill: Allow the bars to cool at room temperature for 20–30 minutes, then refrigerate for at least 1 hour to set before slicing into 12 bars.
  9. Serve: Serve chilled or at room temperature for the best flavor and texture.

Notes

  • For a fun twist, add a drizzle of honey before serving for added sweetness.
  • Mix in a little lemon zest to the cream cheese filling to add brightness and a subtle citrus flavor.
  • These bars are best stored chilled and tend to firm up more when refrigerated overnight.
