Description

A hearty and comforting classic, Smothered Swiss Steak features tender cube steaks browned and then simmered in a flavorful onion and beef gravy. Perfect for a satisfying family meal, this dish combines simple ingredients with rich flavors to create a truly delicious slow-simmered steak experience.

Ingredients

Scale

Steak and Coating

  • 4 beef cube steaks
  • 1/2 cup flour
  • Salt and pepper to taste

Cooking Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cups beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp garlic powder

Instructions

  1. Season and Dredge: Season the cube steaks evenly with salt and pepper. Then dredge each steak in flour, making sure both sides are fully coated to help thicken the gravy later.
  2. Brown the Steaks: Heat olive oil in a skillet over medium-high heat. Add the floured steaks and brown on both sides for 4-5 minutes per side until nicely seared and golden brown.
  3. Sauté Onions: Add the chopped onions directly to the skillet with the steaks. Cook the onions until softened and translucent, about 3-4 minutes, absorbing the steak’s flavors.
  4. Add Liquids and Seasoning: Pour in the beef broth along with Worcestershire sauce and garlic powder. Stir gently to combine all ingredients evenly.
  5. Simmer and Thicken: Reduce heat to medium and let the steaks simmer uncovered in the gravy for 20-25 minutes. This will tenderize the meat and thicken the sauce to a rich gravy consistency.
  6. Serve: Plate the steaks smothered generously with the onion gravy. Serve with mashed potatoes, rice, or vegetables for a complete meal.

Notes

  • For extra thickness, you can mix a small amount of flour or cornstarch with cold water and stir it into the gravy during the last 5 minutes of cooking.
  • Cube steaks are a budget-friendly cut that become tender with slow simmering. Do not rush the simmering step to ensure tenderness.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated gently on the stovetop.
  • To add more flavor, try adding a splash of red wine or some chopped mushrooms along with the onions.
