Description

Ingredients

  • 1 pound smoked sausage, sliced
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced
  • 6 cups chicken broth
  • 4 cups chopped kale, stems removed
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 tablespoon apple cider vinegar (optional, for brightness)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage slices and cook until browned. Remove and set aside.
  2. In the same pot, add onion and garlic; sauté until softened.
  3. Add sweet potatoes, smoked paprika, thyme, and stir to coat.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Return sausage to the pot and add kale. Simmer for another 10 minutes until sweet potatoes are tender and kale is wilted.
  6. Season with salt, pepper, and stir in apple cider vinegar if using.
  7. Serve hot, optionally garnished with extra smoked paprika or fresh herbs.

Notes

  • Use spicy sausage for an extra kick of heat.
  • Substitute kale with spinach or Swiss chard if preferred.
  • Soup thickens as it sits; add extra broth when reheating if needed.
