- 1 pound smoked sausage, sliced
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium sweet potatoes, peeled and diced
- 6 cups chicken broth
- 4 cups chopped kale, stems removed
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- 1 tablespoon apple cider vinegar (optional, for brightness)
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage slices and cook until browned. Remove and set aside.
- In the same pot, add onion and garlic; sauté until softened.
- Add sweet potatoes, smoked paprika, thyme, and stir to coat.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Return sausage to the pot and add kale. Simmer for another 10 minutes until sweet potatoes are tender and kale is wilted.
- Season with salt, pepper, and stir in apple cider vinegar if using.
- Serve hot, optionally garnished with extra smoked paprika or fresh herbs.
Notes
- Use spicy sausage for an extra kick of heat.
- Substitute kale with spinach or Swiss chard if preferred.
- Soup thickens as it sits; add extra broth when reheating if needed.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
