- 4 bone-in, skin-on chicken quarters (or thighs, drumsticks, breasts)
- 2 tbsp olive oil
- 2 tbsp BBQ dry rub
- 1 cup BBQ sauce
- Wood chips (hickory, apple, or cherry), soaked
- Salt and pepper to taste
Instructions
- Preheat smoker to 250°F (120°C) using your choice of wood chips.
- Pat the chicken dry with paper towels. Rub with olive oil, then season with BBQ dry rub, salt, and pepper.
- Place chicken on the smoker grates, skin side up. Close the lid and smoke for about 2.5 to 3 hours or until the internal temperature reaches 165°F (74°C).
- During the last 30 minutes, brush the chicken with BBQ sauce, then continue smoking to allow the sauce to set and caramelize.
- Remove chicken from smoker and let rest for 5-10 minutes before serving.
Notes
- Use a meat thermometer to ensure the chicken is fully cooked.
- For extra crispy skin, finish the chicken under a broiler for 2-3 minutes after smoking.
- Different wood chips impart different flavors—experiment to find your favorite.
