Description

Tender and juicy smoked BBQ chicken infused with smoky flavor and slathered in a tangy barbecue sauce, perfect for cookouts and backyard gatherings.


Ingredients

  • 4 bone-in, skin-on chicken quarters (or thighs, drumsticks, breasts)
  • 2 tbsp olive oil
  • 2 tbsp BBQ dry rub
  • 1 cup BBQ sauce
  • Wood chips (hickory, apple, or cherry), soaked
  • Salt and pepper to taste

Instructions

  1. Preheat smoker to 250°F (120°C) using your choice of wood chips.
  2. Pat the chicken dry with paper towels. Rub with olive oil, then season with BBQ dry rub, salt, and pepper.
  3. Place chicken on the smoker grates, skin side up. Close the lid and smoke for about 2.5 to 3 hours or until the internal temperature reaches 165°F (74°C).
  4. During the last 30 minutes, brush the chicken with BBQ sauce, then continue smoking to allow the sauce to set and caramelize.
  5. Remove chicken from smoker and let rest for 5-10 minutes before serving.

Notes

  • Use a meat thermometer to ensure the chicken is fully cooked.
  • For extra crispy skin, finish the chicken under a broiler for 2-3 minutes after smoking.
  • Different wood chips impart different flavors—experiment to find your favorite.
