Description

A vibrant and healthy Shrimp Avocado Salad packed with juicy shrimp, creamy avocado, crisp vegetables, and a zesty lime dressing—perfect for a light lunch or summer dinner.

Ingredients

Units Scale
  • 1 lb cooked shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and finely chopped (optional)
  • 2 tbsp olive oil
  • 2 tbsp lime juice (freshly squeezed)
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. In a large mixing bowl, combine shrimp, avocado, cherry tomatoes, red onion, cilantro, and jalapeño if using.
  2. In a small bowl, whisk together olive oil, lime juice, minced garlic, salt, and pepper.
  3. Drizzle the dressing over the salad and gently toss to coat all ingredients evenly.
  4. Serve immediately or chill in the fridge for 15 minutes before serving.

Notes

  • Use grilled shrimp for extra flavor.
  • Best enjoyed fresh due to the avocado’s tendency to brown.
  • Add mixed greens or romaine lettuce to make it more filling.
