  • 1 baguette or Italian loaf (sliced lengthwise)
  • 3 tablespoons unsalted butter (softened)
  • 3 cloves garlic (minced)

Shrimp

  • 1 tablespoon olive oil
  • 1 pound shrimp (peeled, deveined, tails off)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika

Avocado Topping

  • 1 avocado (diced)
  • juice of ½ lemon
  • ¼ cup chopped fresh parsley

Optional

  • ¼ cup shredded mozzarella or Parmesan cheese


Instructions

  1. Prepare the garlic bread: Preheat your oven to 400°F (200°C). In a small bowl, combine the softened butter and minced garlic until well mixed. Spread this mixture evenly over the cut sides of the sliced bread. Place the bread halves cut-side up on a baking sheet and bake for 8–10 minutes, until the edges turn lightly golden and the bread is toasted.
  2. Cook the shrimp: While the bread is baking, heat olive oil in a skillet over medium-high heat. Season the shrimp with salt, black pepper, and paprika. Sauté the shrimp for 3–4 minutes, flipping halfway through, until they turn pink and are fully cooked. Remove the skillet from the heat.
  3. Prepare the avocado mixture: In a bowl, toss the diced avocado with lemon juice and chopped fresh parsley. Add the cooked shrimp to the avocado mixture and gently combine so the flavors meld without mashing the avocado.
  4. Finish the garlic bread: Remove the toasted bread from the oven. If using cheese, sprinkle the shredded mozzarella or Parmesan over the bread and return it to the oven for an additional 2 minutes to melt the cheese.
  5. Assemble and serve: Top each bread half with the shrimp and avocado mixture. Slice the topped bread into portions and serve warm for a delightful seafood appetizer or light meal.
