Description

Indulge in a luxurious and creamy Shrimp Alfredo Fettuccine with a healthy twist by adding broccoli. This dish is a perfect combination of succulent shrimp, tender broccoli florets, and rich Alfredo sauce, all served over perfectly cooked fettuccine pasta.

For the Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Alfredo Sauce:

  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 1/2 cups grated Parmesan cheese
  • Salt and pepper to taste
  • 1/2 teaspoon nutmeg

For the Pasta and Broccoli:

  • 8 oz fettuccine pasta
  • 2 cups broccoli florets
  • Salt for pasta water

Instructions

  1. Cook the Shrimp: Season shrimp with salt and pepper. In a large skillet, heat olive oil over medium-high heat and cook shrimp until pink, about 2-3 minutes per side. Set aside.
  2. Make the Alfredo Sauce: In the same skillet, melt butter and sauté garlic until fragrant. Pour in heavy cream, Parmesan, salt, pepper, and nutmeg. Simmer until thickened, about 5-7 minutes.
  3. Cook Pasta and Broccoli: Cook fettuccine in salted water according to package instructions, adding broccoli in the last 3 minutes of cooking. Drain.
  4. Combine Everything: Toss cooked pasta and broccoli with Alfredo sauce. Add shrimp on top. Serve hot and enjoy!

Notes

  • You can add a squeeze of lemon juice for a fresh flavor.
  • Feel free to sprinkle some red pepper flakes for a spicy kick.
