Ingredients
Scale
Prawn Paste
- 12 oz raw prawns, peeled and deveined
- 2 green onions, chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1 egg white
Assembly
- 6 slices white bread, crusts removed
- 1/4 cup sesame seeds
- Vegetable oil, for frying
- 6 mini slider buns
- Lettuce leaves
- Sriracha mayo (optional)
Instructions
- Prepare the prawn paste: In a food processor, combine raw prawns, chopped green onions, soy sauce, sesame oil, grated ginger, minced garlic, and egg white. Pulse the ingredients together until a smooth and cohesive paste forms, ensuring the mixture is well blended for consistent flavor and texture.
- Cut the bread: Take each slice of white bread and cut it diagonally into two triangles, giving you a total of 12 triangular pieces. This size is perfect for making mini prawn toasts fitting inside the slider buns.
- Spread prawn paste on bread: Generously spread the prepared prawn paste onto one side of each bread triangle, covering the surface evenly to create a thick layer that will hold the sesame seeds and maintain crispiness when cooked.
- Coat with sesame seeds: Dip the prawn-coated side of each bread triangle into the sesame seeds, pressing gently to ensure the seeds adhere well to the paste. This creates a crunchy, nutty crust when fried.
- Fry the prawn toasts: Heat vegetable oil in a frying pan over medium heat. Place the prawn toasts sesame side down into the hot oil and fry for about 2 to 3 minutes, or until the sesame seeds turn golden and crispy. Flip the toasts carefully and cook the other side for an additional 1 to 2 minutes until the bread is toasted and the prawn paste is cooked through.
- Drain excess oil: Remove the prawn toasts from the pan and place them on paper towels to drain any excess oil, keeping them crisp and light.
- Assemble the sliders: Open each mini slider bun, place a fresh lettuce leaf inside, and top it with one prawn toast piece. If desired, spread some sriracha mayo inside the bun for a spicy kick.
- Serve warm: Serve the sliders immediately while still warm to enjoy the full crispiness of the prawn toasts and the contrast of textures and flavors.
Notes
- For best results, use fresh prawns and process them until very smooth for a silky texture on the toast.
- Be sure to press sesame seeds firmly on toasting side to avoid falling off during frying.
- Adjust frying temperature if sesame seeds brown too quickly to prevent burning.
- Customize sliders with other sauces such as sweet chili or garlic mayo if sriracha mayo is unavailable.
- These sliders are best served immediately as the bread can become soggy if left too long.
