- 1 cup vital wheat gluten
- 3 tablespoons nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 3/4 cup vegetable broth
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- For the Mustard Dip:
- 1/4 cup vegan mayo
- 2 tablespoons Dijon mustard
- 1 tablespoon maple syrup
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
- In a mixing bowl, whisk together vital wheat gluten, nutritional yeast, garlic powder, onion powder, and smoked paprika.
- In a separate bowl, mix vegetable broth, soy sauce, and olive oil.
- Pour the wet ingredients into the dry ingredients and stir to form a dough. Knead for 2–3 minutes until firm and elastic.
- Let the dough rest for 5 minutes, then slice into thin strips.
- Steam the seitan strips for 25–30 minutes. Let cool slightly.
- Optional: Pan-fry the steamed strips in a little oil until golden and crispy on the outside.
- To make the mustard dip, whisk together vegan mayo, Dijon mustard, maple syrup, lemon juice, salt, and pepper in a small bowl.
- Serve seitan strips warm with mustard dip on the side.
Notes
- Seitan strips can be made ahead and stored in the fridge for up to 5 days.
- Customize the dip by adding a pinch of cayenne or smoked paprika for heat.
- Pan-frying adds extra flavor and texture, but it’s optional.
