Description

Ingredients

  • 1 cup vital wheat gluten
  • 3 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 3/4 cup vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • For the Mustard Dip:
  • 1/4 cup vegan mayo
  • 2 tablespoons Dijon mustard
  • 1 tablespoon maple syrup
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together vital wheat gluten, nutritional yeast, garlic powder, onion powder, and smoked paprika.
  2. In a separate bowl, mix vegetable broth, soy sauce, and olive oil.
  3. Pour the wet ingredients into the dry ingredients and stir to form a dough. Knead for 2–3 minutes until firm and elastic.
  4. Let the dough rest for 5 minutes, then slice into thin strips.
  5. Steam the seitan strips for 25–30 minutes. Let cool slightly.
  6. Optional: Pan-fry the steamed strips in a little oil until golden and crispy on the outside.
  7. To make the mustard dip, whisk together vegan mayo, Dijon mustard, maple syrup, lemon juice, salt, and pepper in a small bowl.
  8. Serve seitan strips warm with mustard dip on the side.

Notes

  • Seitan strips can be made ahead and stored in the fridge for up to 5 days.
  • Customize the dip by adding a pinch of cayenne or smoked paprika for heat.
  • Pan-frying adds extra flavor and texture, but it’s optional.
