Instructions
- Cook Meat: In a medium skillet over medium heat, cook the sausage or ground beef until fully browned and no longer pink, breaking it up as it cooks. Drain excess grease and set aside.
- Prepare Egg Mixture: In a bowl, whisk together eggs, milk, salt, and pepper until fully combined and smooth.
- Sauté Vegetables: Wipe out the skillet, then melt butter or heat oil over medium heat. Add diced onions and bell peppers, sautéing until soft and fragrant, about 3–4 minutes.
- Cook Eggs: Pour the egg mixture into the skillet with the vegetables. Cook over medium heat, stirring gently to scramble, until eggs are softly set but still moist.
- Combine Meat and Cheese: Stir the cooked sausage or beef into the eggs. Remove skillet from heat and sprinkle shredded cheddar cheese over the hot mixture. Stir gently until cheese is melted and evenly distributed.
- Warm Tortillas: Heat tortillas briefly in a warm skillet or microwave until pliable.
