Description

This Sausage and White Bean Skillet is a quick, protein-packed meal made with smoky sausage, tender white beans, and sautéed veggies—all simmered in a light tomato broth. It’s easy, wholesome, and comes together in just 30 minutes for a comforting one-pan dinner.


Ingredients

  • 1 tbsp olive oil

  • 12 oz smoked sausage or kielbasa, sliced into coins

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 red bell pepper, diced

  • 1 (15 oz) can white beans (cannellini or Great Northern), drained and rinsed

  • 1 (14.5 oz) can diced tomatoes (with juice)

  • 1/2 tsp Italian seasoning

  • Salt and black pepper, to taste

  • 2 cups baby spinach (optional)

  • Grated Parmesan cheese, for serving

 

  • Fresh parsley, for garnish (optional)


Instructions

  1. Cook the sausage:
    Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook for 4–5 minutes until browned on both sides. Remove and set aside.

  2. Sauté the veggies:
    In the same skillet, add chopped onion and bell pepper. Cook for 3–4 minutes until softened. Add garlic and cook for 1 more minute.

  3. Add beans and tomatoes:
    Stir in white beans, diced tomatoes (with juice), Italian seasoning, salt, and pepper. Bring to a simmer.

  4. Return sausage & add spinach:
    Return the cooked sausage to the skillet. Stir in spinach if using and cook for another 2–3 minutes until wilted and everything is heated through.

  5. Serve:
    Spoon into bowls and top with grated Parmesan and parsley if desired. Serve with crusty bread or over rice for a heartier meal.


Notes

  • For a spicier version, use hot Italian sausage or add crushed red pepper flakes.

  • Can be made ahead and reheated—flavors develop even more overnight.

 

  • Add zucchini or mushrooms for extra veggies.
