Ingredients
Scale
Sausage and Vegetables
- 1 (12-ounce) package precooked Italian chicken or turkey sausage, cut into ½-inch rounds
- 1 medium red bell pepper, sliced into ¼-inch strips
- 1 medium yellow bell pepper, sliced into ¼-inch strips
- 1 small yellow onion, sliced into ¼-inch strips
Seasonings and Oil
- 3 tablespoons extra virgin olive oil
- 2 teaspoons red wine vinegar
- 2 cloves garlic, minced (about 2 teaspoons)
- ½ teaspoon kosher salt
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- ¼ teaspoon ground black pepper
- ¼ teaspoon red pepper flakes, plus additional to taste
Optional for Serving
- Thinly sliced fresh basil
- Chopped fresh parsley
- Freshly grated Parmesan cheese
Instructions
- Preheat and Prep: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Combine Ingredients: Arrange the sausage rounds, red and yellow bell peppers, and sliced onion evenly on the prepared baking sheet. Drizzle the mixture with the extra virgin olive oil and red wine vinegar. Then sprinkle the minced garlic, kosher salt, dried basil, dried oregano, ground black pepper, and red pepper flakes over the top. Toss everything gently to ensure all the ingredients are evenly coated with the oil and seasonings.
- Roast: Spread the sausage and vegetable mixture in a single layer on the baking sheet. Place it in the preheated oven and bake for 25-35 minutes, tossing the ingredients halfway through the cooking time to ensure even roasting. The peppers should be tender and sausage heated through and slightly caramelized.
- Serve: Remove from the oven and serve hot. Optionally top with freshly sliced basil, chopped parsley, or a sprinkle of freshly grated Parmesan cheese for added flavor and a fresh finishing touch.
Notes
- Use precooked sausages to speed up the cooking process and ensure they are heated through.
- Adjust the amount of red pepper flakes according to your preferred spice level.
- Serve as a main dish with crusty bread or over rice or pasta for a complete meal.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and gently reheated.
