For the Steaks

  • 1 cup mushrooms, finely chopped
  • 1 large onion, chopped and divided (1/4 cup finely chopped for steaks, the rest for gravy)
  • 1 1/2 pounds ground beef
  • 1 egg
  • 1/3 cup panko breadcrumbs
  • 2 tablespoons tomato paste
  • 2 tablespoons whole grain mustard
  • 1 teaspoon minced garlic
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon liquid smoke (optional)
  • 1 1/4 teaspoons kosher salt
  • 3/4 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 tablespoon oil for frying

For the Gravy

  • 1 tablespoon butter
  • 2 1/2 cups sliced mushrooms
  • 3/4 cup chopped onion (remaining from original onion)
  • 1 teaspoon minced garlic
  • 2 1/2 cups beef broth
  • 2 1/2 tablespoons flour
  • 1 teaspoon whole grain mustard
  • 1 tablespoon Worcestershire sauce
  • Parsley, to garnish
  • Creamy mashed potatoes, to serve


Instructions

  1. Prepare the Ingredients: Chop the onion into two parts by setting aside 1/4 cup finely chopped for the steak mixture and chop the remainder more finely for the gravy. Also, finely chop 1 cup mushrooms for the steak and slice 2 1/2 cups mushrooms for the gravy.
  2. Make the Steaks: In a large mixing bowl, combine the 1/4 cup finely chopped onion, 1 cup finely chopped mushrooms, ground beef, egg, panko breadcrumbs, tomato paste, whole grain mustard, minced garlic, Worcestershire sauce, liquid smoke (if using), kosher salt, black pepper, and onion powder. Mix thoroughly until all ingredients are evenly incorporated.
  3. Shape the Patties: Divide the beef mixture into six equal portions and shape each into oval-shaped patties, ready for cooking.
  4. Cook the Steaks: Heat the oil in a large skillet over medium-high heat. Add the patties and cook them for approximately 2 minutes on each side until they are nicely browned. Remove the patties from the skillet and set them aside for the next step.
  5. Prepare the Gravy: In the same skillet, melt the butter. Add the sliced mushrooms and the remaining chopped onion, and sauté for 5 minutes until they soften. Add the minced garlic and cook for an additional minute to release its aroma.
  6. Make the Gravy: In a small bowl, whisk together the beef broth and flour to create a smooth mixture. Slowly pour this into the skillet, whisking continuously to avoid lumps. Stir in the mustard and Worcestershire sauce, and cook for about 2 minutes until the gravy starts to simmer and thickens slightly.
  7. Finish Cooking the Steaks: Return the browned patties to the skillet with the gravy. Reduce the heat and let the steaks simmer for 5 minutes, allowing them to cook through completely while the gravy thickens to the desired consistency.
  8. Serve: Garnish the Salisbury steaks with fresh parsley and serve hot alongside creamy mashed potatoes for a complete and satisfying meal.
