Description

This Rotisserie Chicken and Stuffing Casserole is a comforting, hearty dish that combines savory rotisserie chicken, flavorful Stove Top stuffing, and creamy soup mixtures. With sautéed onions and celery adding a delightful texture, this casserole is perfect for a family dinner or potluck, delivering warmth and satisfying flavors in a simple, all-in-one meal.

Ingredients

Scale

Stuffing

  • 1 package Stove Top stuffing mix (or more if desired)
  • 1 ½ cups water or chicken broth
  • ¼ cup butter

Vegetables

  • 3 stalks celery, diced
  • 1 onion, diced

Chicken & Cream Sauce

  • 1 whole rotisserie chicken, cooked and shredded
  • 1 can cream of chicken soup
  • ½ can cream of mushroom soup
  • 8 ounces sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch baking pan with cooking spray to prevent sticking.
  2. Prepare Stuffing: Bring the water or chicken broth to a boil. Stir in the stuffing mix, remove from heat, cover, and let it sit to absorb the liquid. Once cooled slightly, fluff the stuffing with a fork to separate the grains.
  3. Sauté Vegetables: In a skillet, melt the butter over medium heat. Add the diced onion and celery, cooking until softened and fragrant, about 5 to 7 minutes. This adds extra flavor and moisture to the casserole.
  4. Mix Soups and Sour Cream: In a bowl, combine the cream of chicken soup, cream of mushroom soup, and sour cream. Stir until the mixture is smooth and well blended, forming a creamy sauce.
  5. Assemble Casserole: In the prepared baking dish, spread the shredded rotisserie chicken evenly. Layer the sautéed onions and celery over the chicken, and season with salt and pepper to taste. Spread the creamy soup mixture over the top, and finally, evenly distribute the prepared stuffing on top.
  6. Bake: Place the casserole in the oven and bake for about 1 hour, or until the casserole is bubbly and the stuffing is golden brown on top. This allows the flavors to meld and the casserole to cook through.
  7. Serve: Allow the casserole to cool slightly before serving to let it set and make it easier to portion.

Notes

  • You can substitute chicken broth for water to add more flavor to the stuffing.
  • Leftover rotisserie chicken works perfectly for this recipe, making it quick and convenient.
  • Feel free to add herbs like thyme or parsley to enhance flavor.
  • Add a shredded cheese layer if desired for extra richness.
  • Make sure not to overcook to avoid drying out the chicken.
