Instructions

  2. Simmer the Soup: Transfer the roasted vegetables into a large pot. Add the vegetable broth, tomato paste, and sugar if using. Heat the mixture over medium heat and bring it to a simmer. Allow it to simmer gently for 10 minutes to enhance the flavors.
  3. Blend the Soup: Remove the pot from the heat. Stir in the fresh basil leaves. Using an immersion blender, puree the soup directly in the pot until smooth. Alternatively, transfer the soup in batches to a blender and blend until silky smooth.
  4. Add Cream and Adjust Seasoning: Return the blended soup to the pot (if using a blender). Stir in the heavy cream or coconut milk if you want a creamier texture. Taste and adjust the seasoning as needed with additional salt or pepper.
