Ingredients
Scale
Vegetables
- 2 pounds ripe tomatoes, halved
- 1 medium yellow onion, chopped
- 4 cloves garlic, peeled
Seasonings and Oils
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon sugar (optional, to balance acidity)
Liquids and Broth
- 2 cups vegetable broth
- 1/4 cup heavy cream or coconut milk (optional, for creaminess)
Others
- 1/2 cup fresh basil leaves, packed
- 1 tablespoon tomato paste
Instructions
- Preheat and Roast Vegetables: Preheat your oven to 400°F (200°C). Arrange the halved tomatoes, chopped onion, and garlic cloves on a baking sheet. Drizzle them with olive oil and season with salt, pepper, and red pepper flakes if you choose to use them. Roast in the oven for 30 to 35 minutes until the tomatoes are blistered and the onions are tender.
- Simmer the Soup: Transfer the roasted vegetables into a large pot. Add the vegetable broth, tomato paste, and sugar if using. Heat the mixture over medium heat and bring it to a simmer. Allow it to simmer gently for 10 minutes to enhance the flavors.
- Blend the Soup: Remove the pot from the heat. Stir in the fresh basil leaves. Using an immersion blender, puree the soup directly in the pot until smooth. Alternatively, transfer the soup in batches to a blender and blend until silky smooth.
- Add Cream and Adjust Seasoning: Return the blended soup to the pot (if using a blender). Stir in the heavy cream or coconut milk if you want a creamier texture. Taste and adjust the seasoning as needed with additional salt or pepper.
- Heat Through and Serve: Warm the soup gently over low heat until heated through. Serve your roasted tomato basil soup with a side of grilled cheese or crusty bread for a complete and satisfying meal.
Notes
- For an ultra-smooth texture, strain the soup after blending using a fine mesh sieve.
- Serve with grilled cheese sandwiches or crusty bread to complement the soup’s rich flavors.
- Using San Marzano tomatoes will provide a sweeter, richer tomato flavor.
